The French paradox refers to a phenomenon observed in recent years. The French diet is a high-fat diet in which moderate amounts of red wine are regularly consumed. Despite this, the risk of cardiovascular disease in the French is one-third lower than in Americans. Scientists explain this by the presence of phenolic compounds (resveratrol) and flavonoids (quercetin) in red wine.
